A large cut of pork is marinated in a special sauce, then slow-cooked at a low temperature to ensure it's tender all the way through. It's then pan-fried to order, resulting in a perfect balance of a crispy, fragrant exterior and a moist, tender interior. This popular dish is generously portioned with 270g of meat!

The pork used is "Barley-Finished Three-Breed Pork," a Canadian brand of pork.The meat is marinated in a special sauce made by mixing apple juice and Worcestershire sauce, then cooked at a low temperature for about 3 hours to cook it through, and finally finished in a frying pan and salamander to give the surface a crispy and fragrant finish.
